Asian Inspired Cabbage Side Dish

Easy cabbage and carrot side dish

Whenever I make an Asian meat or noodle dish this veggie side often becomes the star. It’s so simple with 4-5 ingredients and takes hardly any time at all. The flavors are refreshing and palate cleansing, it really allows the vegetables to shine. 

3 medium carrots

½ head green cabbage

1 tablespoon extra-virgin olive oil

Salt and ground black pepper to taste  

Peel and slice the carrots. Place in a saucepan over medium heat with a tablespoon of olive oil. Cook for 2 minutes then add cabbage cut into bite size pieces. Sauté for 2 more minutes just until cabbage is slightly tender and brightly colored. Add salt and pepper to taste and serve.
