Simple, Crunchy, Vegan, Parmesan Lima Beans Side Dish

Lima beans. One of the most hated foods in the United States. Most hate them but a few like myself actually think they’re fine or even enjoy them. Regardless of where you stand on the matter These vegan parmesan lima beans are just plain tasty. I came by the dish after seeing a tik-tok by @halleburns where she made the same dish. I just knew I had to try it but didn’t have measurements so here’s my version. If I had to describe the dish it’s a bit like a Tator-tot crunchy outside with a mashed potato inside. They taste fabulous with your favorite dipping sauce and even my mother who hates and I do mean hates, lima beans will eat them and enjoy them like this. They take a bit of planning ahead since they need to soak overnight but they are a very simple dish to make.

This is a fantastic side to go with a veggie burger instead of fries. Although potatoes have a little less calories and carbohydrates per serving than lima beans they are not as nutrient dense. Lima beans have beneficial complex carbohydrates and is a low glycemic index food. Lima beans contain fiber, vitamin c, iron, potassium, magnesium, folate, choline, and vitamin k. They are also higher in protein than potatoes.

Lima beans- After soaking overnight the lima beans should begin to split open.

Oil- Olive or avocado oil are my favorite to use.

Parmesan- I use a vegan parmesan but if you are not vegan or don’t have a dairy allergy real parmesan is a good (and cheaper) option.

Parsley- I use fresh parsley but a about a tablespoon of dehydrated will work as well.

Salt- the salt doesn’t stick well after air frying so make sure you have them salted to your taste buds before cooking them.

Equipment

  • 1 air fryer
  • parchment paper

Ingredients
  

  • 1 cup dry lima beans
  • 1 tbsp olive oil
  • 1/2 cup chopped fresh parsley
  • 1/4 cup vegan parmesan
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt to taste

Instructions
 

  • In a cereal bowl place, the dry lima beans and enough water to cover the beans and have about an inch of water over them. Leave to soak overnight or for 8 hrs.
  • Drain the lima beans and place in a pot of water to boil for about 20-25 minutes.
  • Drain them again and pat dry with a clean towel.
  • Put the lima beans in a medium bowl and add in olive oil, fresh chopped parsley, garlic, salt, onion, and chopped parmesan. Stir until each lima bean is coated.
  • Line an air fryer tray or basket with parchment paper and cook the beans at 370 degrees F. for 15 minutes.
  • Carefully remove from air fryer and eat them while still hot with your favorite dipping sauce.
