Easy cream cheese thumbprint cookies

These cookies are so soft and sweet. They practically melt in your mouth. Very easy to make and they take hardly any time at all. They bake in just 10 minutes and “disappear” off the cooling rack in less than that. If you’re not a fan of jelly these cookies can be made as plain cream cheese cookies and they’re still delectable.

½ cup unsalted room temperature butter

4 oz room temperature cream cheese

1 cup powdered sugar

1 egg

1 teaspoon vanilla

2 ¼ cups all purpose flour

½ tsp baking powder

¼ tsp salt

Jelly/jam of choice

Preheat the oven to 375 degrees F. In a large mixing bowl cream together the butter and cream cheese until smooth and whipped thoroughly. Add in an egg and teaspoon of vanilla. Cream together again before adding the powdered sugar. Mix the batter well incorporating all the sugar so it’s not lumpy. Next toss in the salt and baking powder, and finally the flour. Mix well, then form the dough into one-inch balls and place on a parchment lined cookie sheet an inch and a half away from each other. Using your thumb, create an impression into the dough balls in which to place your jelly. Carefully spoon jelly/jam to fill the thumb shaped craters. Bake for 8-10 minutes. Lastly after removing them from the oven wait two minutes before transferring the cookies from the cookie sheet onto a cooling rack.
